Should I do any type of stretching after speed, when a weight session follows 2-4 hours later? I know u should drop the stretching after speed when weights immediately after. For me it is best to wait 2-3 hours before doing the weights, because I feel I need some food after sprints, if i don’t eat I become unconcentrated and my heart starts to bounce.

Yes,
I think that stretching between double day workouts may help re-lengthen your muscles (think of the force-lenghth curve) After a workout your muscles may be in contracture, on the weak end of the force length curve. Stretching may help bring them back to their optimal cantraction length.
