Re training set-up. Work through your requirements from the most to the least important till your sessions are full. That’s the best you can do.
Re Special Endurance. Whichever way you do it, you must do it as long as you can maintain perfect form and complete extention. Form always matters!

Is it possible for a third weights/plyos session for such a set-up?
Would you include them (weights&plyos) after the 2nd speed session (Day5) of after the SE2 + Strength Endurance (Day 6)?
Weights can be done last thing on the day, but plyos would require a reorganization of the day to occur first after the warm-up as they are the most intense element. I think, however, that it would be better to concentrate on the Strength Endurance and skip the plyos that day.
