I HIGHLY recommend Carlson’s Fish Oil. I have only taken their Cod Liver Oil, but I found it far superior to any other brand I’ve tried. It’s one of the rare supplements that makes a profound difference for me. If you are getting all your veggies and need to cut costs, I would skip the multivitamin and go with the oil. Try the Cod Liver Oil for extra vitamin D when you aren’t getting any sun, and the fish oil during times you do get sun.
The rest of the diet looks good. The only thing I might suggest is to try and keep your water intake separate from meals. Drinking more water hampers digestion by a)allowing you to swallow without properly chewing your food and b)it dillutes digestive enzymes and acid in the stomach. Of course, if you are thirsty or haven’t been drinking enough water, its more important to drink it than worry about the digestion of an individual meal.
