I just got done making a recipe of oatbar’s with flaxseed in it, and I thought some of you guys would be interested. It was unbelievable easy to make, and I am definitley no Martha Stewart in the kitchen. In fact, I have no idea what the hell I am doing in there. I threw in a scoop or two of grow for added protein, which I think is necessary with this recipe. Here it is:
Flax Peanut Butter Oat Bar

INGREDIENTS:
½ cup peanut butter (preferably natural)
2 cups oats (Scottish oats have more fiber)
½ cup raisins
½ dried apricots or any dried fruit of your choice
2 Tbsp Honey
1 cup Flax seeds (measure whole, then grind in coffee grinder)
(Serving suggestion)
DIRECTIONS:
Process on high speed until everything is mixed together. Place a sheet of wax paper across the bottom of a casserole pan or cookie sheet. Pout the mixture onto the wax paper. Place another sheet of wax paper on top and press firmly to evenly distribute the mixture. Place in refrigerator for 2 or more hours to allow to become firm. Slice into 20 even pieces.
Per serving:
180 calories
7g fat
7g protein
25g carbohydrates
6g fiber
Store in the refrigerator in an airtight container.
It is in the refrigerator now, and my only worries are how it will hold together. It was kind of like the texture of a heavy cereal (such as granola). Hopefully the fridge will help it settle together. Anyways, I thought it could be of help to somebody here.
